SUMMARY
The Assistant Food and Beverage Manager is responsible for assisting the Food & Beverage Manager in overseeing the Laguna Grille, Tiki Bar, and Surf Bar.
This person is responsible for daily operations of all bar activities in Splash Lagoon, and should ensure timely and safe service of all food and beverage products to resort guests.
ESSENTIAL DUTIES AND RESPONSIBILITIES which may include, but are not limited to, the following tasks: Place orders and receives deliveries Work with various vendors on pricing, invoicing and product quality.
Monitors food preparation and test cooked food Schedules staff and assigns duties Monitors compliance with health and fire regulations.
Coordinates assignments of cooking personnel and bartenders Ensures records required by the government agencies are kept.
Establishes standards for personnel and customer service.
Communicates with supervisors, peers and subordinates Makes decisions, resolves conflicts and solves problems that may arise.
Organizes, Plans and Prioritizes work develop specific goals.
Monitors and controls resources Evaluates information to determine compliance with standards Trains and instructs all staff on the different processes, procedures and proper food handling at the Food Court and at the Bar.
Conducts monthly inventory and checks for accuracy.
Prevents shrinkage Propose new revenue generating ideas and cost saving measures Attends weekly operating meeting with all managers.
Presents weekly and monthly reports on progress.
Signs and Codes invoices promptly Conducts the hiring process by calling applicants, interviewing and calling references.
Works as a team with other managers and departments to complete tasks.
Orders and contributes to planning and executing for special events Accurately and effectively wait on guest.
Have superior cash handling abilities Guiding, Directing, and Motivating Subordinates — Providing guidance and direction to subordinates, including setting performance standards and monitoring performance.
Training and Teaching Others — identifying the educational needs of others, developing formal educational or training programs or classes, and teaching or instructing others.
The Asst.
F&B Manager must be able to create, analyze, and interpret reports generated from the Pathfinder system.
Be able to operate a personal computer with basic knowledge of word processing and spreadsheet functions.
Must have advanced knowledge of food service procedures.
Ensuring Food Service Attendants & Food Service Supervisors follow Splash Lagoon Policies and Procedures; Assistant F&B Manager may initiate and follow disciplinary actions up to and including suspension and/or termination.
QUALIFICATIONS Ability to properly and safely operate equipment used.
Must be 18 years of age or older.
Demonstrated ability to work independently.
Ability to communicate effectively with public, guests and staff members.
Must have emotional stability and the ability to make sound decisions that conform to facility policies when dealing in adverse situations.
Knowledge that their decisions may affect the total facility and the lives of others.
Must be firm, fair, consistent and courteous in order to gain the respect and cooperation of the public.
Must have a positive attitude in order to fully cooperate with other employees in a team effort, and adhere to rules and regulations to ensure successful operation of a facility.
Must have the physical and mental conditions necessary to be able to properly and timely activate and complete the EAP system in the case of an emergency.
Must possess good oral communication skills.
Must be skilled in the use and care of supplied equipment.
Independent judgment concerning work methods and procedures is required.
EDUCATION and/or EXPERIENCE Minimum high school diploma or GED equivalent.
College degree preferred 2-3 years of bar management experience.
